Thai Catfish Curry
Easy Campfire Recipes
Thai catfish curry is extremely quick and easy to make and the spicy and tropical flavors are an excellent respite from fried catfish.
Standard kitchen kit
5 quart cast iron pot
Small saucepan for the rice
you can substitute vegetable oil, but it won't have as much cononut flavor
red curry paste
layer from the top of a can of coconut milk
2 inch piece
cut into 4 or 5 disks
Thai chile or serrano pepper
halved, seeded and sliced into thin half-moons.
dark brown sugar
Before You Leave Home
This recipe is so quick and easy that there isn't any need to do anything at home. Just pack everything in your ice chest and go.
At the Campsite
Add the oil, curry paste, coconut cream, garlic and ginger to a pot and cook over medium-high heat. Fry about 2 minutes, until the curry paste is fragrant.
Stir in the coconut milk, water, fish sauce, chiles and sugar. Add catfish fillets and reduce heat to a simmer. Cover and simmer for 3 minutes.
Flip fillets over and simmer 2-3 more minutes.
Discard ginger slices. Serve with rice. Garnish with lime wedges and cilantro leaves.
If you like heat, don't seed the Thai Chiles (or Serranos). You can even add extra if you really want to amp it up.
You can also top your plate with some raw slices.
